Coconut Walnut Cake Bars

Makes 2 Dozen Bars

  • 1/2 cup butter, softened
  • 1 box yellow cake mix
  • 3 eggs, divided
  • 1 (8-oz.) package cream cheese, softened
  • 1 (1-lb.) box powdered sugar
  • 1/2 cup flaked coconut
  • 1/2 cup chopped walnuts
  1. Preheat oven to 325°F.
  2. Combine butter, cake mix, and 1 egg in medium bowl, stirring until dry ingredients are moistened.
  3. Pat mixture into the bottom of well-buttered 15x10-inch jelly roll pan.
  4. In separate bowl, beat remaining eggs lightly, then beat in cream cheese and powdered sugar.
  5. Stir in coconut and walnuts.
  6. Pour over the crust in pan, spreading evenly.
  7. Bake for 45 to 50 minutes or until golden brown.
  8. Let cool completely before cutting.
