Makes 5 to 6 Dozen Cookies
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 2/3 cups tightly packed sweetened flaked coconut
- 1 cup chopped pecans
- 1 cup Craisins® or dried cranberries
- 1/2 cup white chocolate chips
- Heat oven to 350°F.
- In large mixer bowl, beat butter and sugars until fluffy.
- Beat in egg and vanilla.
- In another bowl, mix flour baking soda and salt; mix into butter mixture to blend thoroughly. Mix in coconut, pecans, Craisins® and chocolate chips to distribute evenly.
- Cover and chill dough 1 hour.
- Drop 1-inch mounds of dough, spaced 2 inches apart, onto greased baking sheets.
- Bake 8 to 10 minutes until edges are lightly browned.
- Cool on pans 10 minutes, then remove to racks to cool completely.
