First Alarm Coconut Craisin® Cookies

Makes 5 to 6 Dozen Cookies

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 2/3 cups tightly packed sweetened flaked coconut
  • 1 cup chopped pecans
  • 1 cup Craisins® or dried cranberries
  • 1/2 cup white chocolate chips
  1. Heat oven to 350°F.
  2. In large mixer bowl, beat butter and sugars until fluffy.
  3. Beat in egg and vanilla.
  4. In another bowl, mix flour baking soda and salt; mix into butter mixture to blend thoroughly. Mix in coconut, pecans, Craisins® and chocolate chips to distribute evenly.
  5. Cover and chill dough 1 hour.
  6. Drop 1-inch mounds of dough, spaced 2 inches apart, onto greased baking sheets.
  7. Bake 8 to 10 minutes until edges are lightly browned.
  8. Cool on pans 10 minutes, then remove to racks to cool completely.
