Super Chocolate Chip Peanut Butter Cookies

Makes 2 1/2 Dozen Cookies

  • 1/2 cup peanut butter
  • 3/4 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips
  1. Preheat oven to 375°F.
  2. In large bowl, beat peanut butter, butter, sugars, egg, and vanilla until well blended.
  3. In separate bowl, stir together flour, baking soda, and salt; add to creamed mixture and mix well.
  4. Stir in chocolate chips.
  5. Drop batter 2 inches apart onto parchment-lined cookie sheets.
  6. Bake for 12 to 15 minutes.
  7. Let stand 2 minutes before removing from cookie sheets. Cool on wire racks.
