Makes About 2 1/2 Dozen Cookies
- 1 cup butter, softened
- 3/4 cup brown sugar, packed
- 3/4 cup sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 2 cups flour
- 1 teaspoon baking soda
- 2 cups old fashioned oats
- 1 cup semi-sweet chocolate chips
- 1 1/4 cups dark chocolate covered raisins
- Preheat oven to 350°F.
- Beat butter, sugars, and vanilla in large bowl until creamy.
- Add eggs and beat well.
- In separate bowl, stir together flour and baking soda; set aside.
- In a blender or food processor, finely chop oats until they are the texture of flour.
- Stir oats into dry ingredients and add to butter mixture; mix well.
- Stir in chocolate chips and chocolate covered raisins.
- Drop by tablespoons onto ungreased cookie sheets.
- Bake for 10 to 11 minutes or until tops are golden brown.
- Cool to room temperature on cookie sheets.
