California Teleme With Red Onion Salsa

Yields 4 Servings

  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped red bell pepper
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon sugar
  • Salt and freshly ground black pepper, to taste
  • 12 1-ounce spoonfuls California Teleme cheese
  • 12 toasted baguette slices
  1. In a small bowl, mix red onion, bell pepper, lime juice, cilantro and sugar. Season to taste with salt and pepper.
  2. Place one spoonful of Teleme on each toasted baguette slice. Top with salsa. Arrange three baguette slices per serving on individual serving plates.
