California Milk Advisory Board Celebrates Small Bites Trend With Brochure Spotlighting Nibbles, Starters & Small Plates Featuring California Dairy

From mini desserts to single bite appetizers, small plates are hotter than ever—and 2013 food trends reveal that these petite plates are here to stay with a continued evolution of smaller portions being featured at white tablecloth and quick serve restaurants. But this bite-sized trend isn’t just for dining out as more consumers are experimenting with their own small plates at home. The California Milk Advisory Board (CMAB) is offering a free consumer brochure with tips and recipes for tapping into this trend for holiday celebrations or every day meals.

SOUTH SAN FRANCISCO, Calif., & MODESTO, Calif. – June 5, 2012 – The month of June may be the start of summer, but it also kicks off a month-long celebration of all things dairy. As the number one dairy state, California is celebrating June Dairy Month with a proclamation from California Governor Jerry Brown declaring June “Real California Milk Month” in recognition of the importance of California’s dairy industry and 30 days of activities celebrating and supporting milk and dairy products and the farmers who bring this essential food to the table.

REAL CALIFORNIA CURRIED CARROT SOUP1 1/2 pounds carrots, peeled and cut into 1-inch pieces

1 tablespoon vegetable oil

8 cups Real California 1% milk

Zest of 3 limes, removed in large strips with vegetable peeler

4 tablespoons Real California butter

1 tablespoon curry powder

1 large onion, thinly sliced

2 tablespoons white rice

Salt and freshly ground white pepper

California Skinny Sweet Pea Soup

CALIFORNIA SKINNY SWEET PEA SOUP

3 cups Real California 1% milk

3 cups reduced-sodium chicken broth

1 cup peeled and diced russet potato

6 scallions, whites only, sliced thin

12 large fresh mint leaves

4 cups shelled fresh or frozen sweet peas

Salt and freshly ground white pepper

1/2 cup non-fat Real California sour cream or Greek-style yogurt

* 1/2 teaspoon Pepper

* 1 package Frozen Hash Brown Potatoes Diced and Unseasoned

Sour Cream Waffles

Makes 4 Servings

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs, separated
  • 1 3/4 cups sour cream
  • 5 tablespoons melted butter
  1. In a mixing bowl, stir together flour, sugar, baking powder and salt.
  2. Separately, beat egg yolks with sour cream and melted butter. In another bowl, beat whites until stiff peaks form.
