Ingredients

1 cup crushed pecan shortbread cookies, such as Pecan Sandies

1 cup finely chopped toasted pecans, plus 1 c. coarsely chopped toasted pecans

1/3 cup Real California butter, melted, plus more for the pan

1 qt. Real California butter pecan ice cream, softened

4 ripe peaches, peeled and diced

Belgian Hot Apple Pie Cocktail

Yield: 1 serving

1 large scoop Real California vanilla ice cream

1 ounce apple brandy

12 ounces Belgian apple lambic beer

Place ice cream in a large glass. Pour brandy into a small glass. Carefully touch a lighted match to surface of brandy to ignite it. When flames die down, pour brandy over ice cream and fill glass with beer. Serve with a spoon and a straw.
