Baking for the holidays is a time-honored tradition that conjures up warm memories. Whether you're making Grandma's pumpkin pie or Aunt Sue's special cookie recipe, be sure to keep your pantry and fridge stocked with baking staples.

Spinach and Cottage Cheese Salad

Servings: 1

Ingredients:
2/3 cup nonfat or low-fat California cottage cheese
1 tablespoon chopped, pitted Kalamata olives
1/4 cup chopped fresh spinach
2" piece of English cucumber, cut into 1/4-inch cubes (plus slices for garnish)
Salt and freshly ground black pepper

Curried Cottage Cheese and Mango Chutney Dressing

Makes 3/4 Cup

  • 1/2 cup fat free cottage cheese
  • 2 tablespoons mango chutney
  • 2 tablespoons white wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon curry powder
  • 1 teaspoon honey mustard
  • Salt and freshly ground pepper to taste
  1. Place cottage cheese, chutney, vinegar, oil, curry and mustard in a food processor; blend until smooth.
  2. Season with salt and pepper.

  • 1 carton (16 ounces) California Cottage Cheese
  • 1/4 cup plus 2 tablespoons orange marmalade (for divided use)
  • 4 eggs, separated
  • 1/4 cup all purpose flour
  • 1/8 teaspoon salt
  • 1 teaspoon butter
  • 1/4 cup pure maple syrup
  • 4 thin orange slices for garnish (optional)

  • 1/3 cup halved grapes (about 9-12 grapes)
  • 2 tablespoons chopped walnuts

  • 1/2 cup fresh lettuce, torn into bite-sized pieces
  • Salt and freshly ground black pepper
