Buttermilk

Herbed Buttermilk, Garlic and Parmesan Dressing

Makes 1 cup

  • 1/2 cup low fat buttermilk
  • 1/4 cup (1-oz.) freshly grated Parmesan cheese
  • 2 tablespoons red wine vinegar
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon olive oil
  • 1 tablespoon fat free mayonnaise
  • 2 teaspoons whole grain Dijon mustard
  • 1 clove fresh garlic, minced

Buttermilk

A Definition

Buttermilk is the low-fat portion of milk or cream remaining after it has been churned to make butter. Today, buttermilk is not a byproduct of butter-making, but is made from nonfat or low-fat milk that is “cultured” with lactic acid bacteria. Cultured buttermilk is low in fat and calories, but maintains its traditional tangy flavor and creamy texture.
